It’s not fancy and it’s definitely NSSBP (Not South Shore Bar Pizza), but I wanted to share a quick snack/dinner I’ve been making for all my keto friends. Since going keto about a year ago, I have shed off over 50 pounds! I still have plenty of cheat days reserved for the real deal South Shore Bar Pizza, but when I’m craving pizza this is my quick “go to”.
And the best part is, These “Quick Keto Pizza’s” can be made in under 10 minutes!
The Crust – Mission Carb Balance Flour Tortillas, these have been a life saver. If you are trying the Keto diet you will find these handy not just for pizza crust, but for wraps, tacos and quesadillas too.
The Cheese – I use fresh grated parmesan only. Just like with the South Shore Bar Pizza recipe, pre-shredded cheese is NOT recommended. The cellulose coating on the pre-shredded cheese does not taste good and it burns easily.
The Sauce – Rao’s Margherita Pizza Sauce is my favorite for this type of pizza, but it’s not always in stock. A few spoonfuls of Rao’s marinara also does the trick. Their sauces are low on sugar and carbs. Just make sure whatever sauce you are using isn’t too high in sugars and carbs!
The finished product – A light, crispy and flavorful little keto pizza disc! Try these and let me know what you think
The Hardware
Toaster Oven – This is the Breville Convection Toaster Oven that I have and it’s been pretty awesome, no complaints here!
Cheese Grater – Just a simple Box Grater like his is all you need.

Quick Keto Pizza Instructions

Turn toaster oven on to Bake at 400.

Toast Mission Carb Balance tortilla for about 1.5 minutes until it starts to brown.

Take out of toaster oven and place on a paper plate , leave the toaster oven on while you prepare the pizza

Spread 2 spoonfuls of sauce evenly around tortilla

Spread a generous amount of freshly grated cheese on tortilla

Place back into the toaster oven and bake until cheese is melted and edges are golden brown

Garnish with some oregano if you like, Enjoy!
